March 2025
Honoring Chef Nadia Santini for Women's History Month
At Rosemary’s, we believe in celebrating the culinary pioneers who have shaped the food world. This Women’s History Month, we’re spotlighting Chef Nadia Santini, a trailblazer in Italian cuisine and the first woman to receive three Michelin stars in Italy. To honor her legacy, we’re featuring her Risotto alla Milanese with Artichokes on our West Village, Stuytown, and Midtown dinner menus throughout the month of March.
A Dish Steeped in Tradition
Risotto alla Milanese is a dish that embodies the elegance and depth of Northern Italian cooking. Characterized by its luxurious saffron-infused broth and rich, creamy texture, it has been a staple in Milanese kitchens for centuries. Chef Santini, known for her reverence for tradition and commitment to quality, elevates this classic dish with seasonal ingredients and precise technique. At Rosemary’s, we’re adding artichokes for a fresh, slightly nutty contrast to the buttery, golden risotto, bringing a taste of spring to the plate.
Who is Nadia Santini?
Chef Nadia Santini is the force behind Dal Pescatore, a renowned restaurant in Lombardy, Italy, that has been in her husband’s family for generations. Without formal culinary training, she learned the art of cooking from her mother-in-law and went on to earn the highest accolades in the industry. Her cuisine is deeply rooted in tradition, yet it feels refined and contemporary—an approach that has inspired chefs worldwide. Her story is one of dedication, passion, and the power of family heritage in the kitchen.
Dine for a Cause
This Women’s History Month, we’re not only celebrating inspiring chefs but also supporting future generations in the food industry. For every Risotto alla Milanese with Artichokes sold, we’ll be donating $1 to Hot Bread Kitchen, an organization that empowers women, immigrants, and people of color through culinary training and career support. Join us at Rosemary’s (all NYC locations!) this March to enjoy this exceptional dish and be part of a meaningful movement to uplift women.
